For a new client who wanted to celebrate her aunt's 88th birthday in style, we decided on a cake fit for a queen, complete with tiara. I made a yellow cake with chocolate ganache between the layers, chocolate buttercream, “quilted” blue fondant and blue “gems” for a little sparkle. The tiara was made from fondant, airbrushed with edible silver “paint”. I hope Joan enjoyed the royal treatment she deserved!
