Last year, I made a boat cake for a client's milestone birthday party but he couldn't eat it because he is diabetic. So, I made him a small, sugar-free cake that he could enjoy while his guests ate the other cake, and he loved it. When his birthday came around this year, I once again made him a sugar-free creation. This one was a vanilla cake with cherries mixed in, topped with a lemon buttercream and finished with ocean-themed decorations. (I knew he loved his boat and the ocean, so it made sense to go with that theme once again!) He got a kick out of the wave-design piping and I was happy I could make him a cake that he could enjoy without worrying!
