As you may already know, I volunteer as an Icing Angel for the nonprofit Icing Smiles, where I bake and donate cakes to sick children who are celebrating their birthday in the hospital. I recently was honored to make this unicorn rainbow princess cake for a girl celebrating her 7th birthday. I wanted to incorporate all of the things her mom said she loves, such as rainbows, glitter/sparkly things, the colors pink and purple, and, of course, unicorns!
The bottom tier, a vanilla cake frosted with pink and purple buttercream, features buttercream rainbows and clouds as well as some lavender unicorn, gold crown, and gold dot sprinkles. The top tier is six rainbow layers of vanilla cake frosted with buttercream and decorated to look like a unicorn using purple and pink buttercream, gum paste gold flowers, a fondant unicorn horn and ears, and gold unicorn horn sprinkles.
Because of COVID, I had to leave the cake with the nurse at the hospital so I didn't get to see the birthday girl's reaction to the cake, but I really hope she loved it!
